Not crazy about eggplant. I've had calamari deep-fried, and liked it, but it's a little rubbery cooked other ways. I like the flavor of onions, but as I said, I'm fussy about texture. Feta I can eat on its own, but I prefer it in a nice salad.

No. The oil always comes to the top. "The cream [fat] always rises." It has to do with the fact that I added the dried herbs and then snapped two pictures but I reversed them in presentation here. There are herbs in the picture above the one in which I purport to add them.

I don't mean to be deceptive but the picture I took before adding the herbs was bad.

If you stew onions with other ingredients, as in a soup or chicken and dumplings, they become very soft . . . almost invisible in terms of texture, but they are an important layer of flavor.

You love feta and yogurt . . . maybe a Mediterranean palate? And obviously fond of dairy. Do you like calamari? It's the only food I've ever eaten that makes me sick. More than once because I wanted to make sure. How about eggplant? It's one of my favorites. I'm drawn to the nightshade family. Both are Mediterranean foods.

Is it unusual for the oil to float on top of the vinegar? Interesting; I don't like cooked onions, as they have this crunchy / slimy texture that disturbs my finicky palate. I love feta, though.

A hint: look closely at the oil in the photo above the one that shows herbs floating on top.
